FLOURLESS BANANA CREPES (2 INGREDIENTS)
January 04, 2021These simple banana crepes do not use any type of flour, and have a soft and moist texture.
Some crepes and pancakes recipes often say that they are "flourless", but then you see the list of ingredients and they have 1 or more flours other than wheat, usually oat, almond, or coconut. In this case, however, we only need 2 ingredients - eggs and bananas, and you can add other ingredients if you like.
The ingredients
- Eggs - are the main ingredient of these crepes.
- Bananas - the main purpose of this fruit that shouldn't be too ripe is to sweeten the crepes and add some fiber to it. For this recipe, it's not advisable to use frozen bananas, as they have more moisture and could alter the consistency of the crepes.
- Cinnamon and Vanilla - are two optional elements that serve only to flavor the crepes. They can be substituted by other seasonings.
How to make
- Break the eggs into a blender or hand mixer cup.
- Add peeled and sliced bananas.
- Add cinnamon and vanilla.
- Mix well until you get a smooth, lump-free cream.
- Grease a pan with a little oil or butter.
- When it is hot, pour a portion of the preparation (for each crepe I used the measure of 1/4 cup) until it covers the bottom of the pan. They should be cooked over low heat so that they don't get too dark.
- When they start to show a little color and some "bubbles", and with the help of a spatula, try to loosen the edges of the crepe, and turn carefully to gain color on the opposite side. As I used my 22 cm crepe pan I noticed that it is difficult to turn these crepes without damaging them (as they have no flour), so I just folded them in half and then turned them over to cook on the opposite side. So, for this recipe, I recommend making the crepes in a smaller frying pan so that it is easier to turn them whole. Serve with fruit and/or ice cream, or simply with powdered sugar, honey, or whipped cream.
- It yields me about 8 crepes with the mentioned size.

Ingredients
4 eggs
2 bananas
1/4 teaspoon of cinnamon (optional)
1 teaspoon vanilla (optional)
- In a container such as a hand mixer cup or blender, place all the ingredients.
- Blend everything until smooth and without lumps.
- Grease a skillet or pan with oil or butter.
- When it is hot, pour a little of the cream until it covers the pan.
- When it starts to show some “bubbles”, and with the help of a spatula, loosen the edges of the crepe, and turn carefully to gain color on the opposite side.
